Sourdough Discard Crackers

Stop throwing away your sourdough discard! These crackers are thin, crispy, and incredibly addictive. They're also a perfect way to reduce food waste.

Ingredients

  • 200g sourdough discard
  • 60g olive oil
  • 5g flaky salt
  • 1 tsp dried herbs (rosemary, thyme, or oregano)
  • Seeds for topping (sesame, poppy, everything bagel seasoning)

Method

  1. Mix discard, olive oil, salt, and herbs
  2. Divide dough in half
  3. Roll each half paper-thin between parchment
  4. Sprinkle with seeds, press gently
  5. Score into crackers with knife
  6. Bake at 350°F for 15-20 minutes until golden
  7. Let cool completely for maximum crispness

Flavor Variations

  • Everything: Sesame, poppy, garlic, onion, salt
  • Italian: Parmesan, rosemary, black pepper
  • Seeded: Sunflower, pumpkin, flax, sesame
  • Sweet: Cinnamon sugar, drizzle with honey
